Driven by the memory of a truly exceptional whisky enjoyed during a London sojourn, Paul Cirka embarked on a mission to redefine the landscape of Canadian whisky. His vision was clear: to instill a distinct regional character into every sip of his craft. This journey led him to the historic Lachine Canal in Montréal, a location steeped in tradition and just a stone's throw from the iconic silos of the Canada Malting Company. In 2016, Paul, alongside their head distiller, Isabelle Rochette, set their artisanal production in motion.
Fast forward to 2021, and their dedication to crafting exceptional spirits earned them the prestigious Laurier Gastronomy Award for excellence in production. This award, often regarded as the 'Oscars of the Quebec Hospitality Industry,' holds immense significance as it derives its prestige from the votes of industry professionals who recognize and applaud their commitment to excellence.
Whiskey No. 3 marks their third whisky release in a series of small batches, following the highly acclaimed Premier Whisky. Whisky No. 3 is a meticulously crafted rye whisky, aged for four years and comprised of 93% locally sourced Quebec rye combined with 7% of German chocolate malted rye. To add a touch of elegance, it's then lovingly finished in 30-year-old sherry Oloroso casks imported all the way from Spain. What sets this whisky apart? It's a pure expression of its natural colors, with no additional coloring, and it remains unaltered through a non-chill filtration process.

Cinnamon Old Fashioned Recipe
Ingredients:
2 oz Cirka Whiskey No 3.
1/2 oz Cinnamon Syrup (see recipe below)
2-3 dashes of Angostura bitters
Orange peel or cinnamon stick for garnish
Ice
Directions:
Start by making the Cinnamon Syrup:
In a small saucepan, combine 1 cup of water, 1 cup of granulated sugar, and 4-5 cinnamon sticks.
Bring the mixture to a simmer over medium heat, stirring until the sugar is fully dissolved.
Let it simmer for an additional 2-3 minutes.
Remove the syrup from heat and let it cool.
Once cooled, strain out the cinnamon sticks and transfer the syrup to a glass jar or bottle. It can be stored in the refrigerator for several weeks.
In an Old Fashioned glass, add the Cinnamon Syrup and Angostura bitters.
Fill the glass with ice cubes.
Pour the whiskey over the ice.
Stir the cocktail gently for about 20-30 seconds to combine the ingredients and chill the drink.
Express the essential oils from a piece of orange peel over the drink by holding it over the glass, giving it a good twist to release the oils, and then running it around the rim of the glass. Drop the peel into the glass.
Optionally, garnish your Cinnamon Old Fashioned with a cinnamon stick for extra aroma and flavor.
Serve and enjoy your Cinnamon Old Fashioned!
Adjust the sweetness to your liking by adding more or less Cinnamon Syrup.
